RECIPE: Baby it’s cold outside…

Well the holiday season is officially a wrap! And I for one, could use a little more cheer! 

The Atlanta Snowpocalypse arrived Sunday night and my car hasn’t left the parking garage since. Four long days since the snow fell and we are still dealing with sheets of ice and snowy slush everywhere.

Thank goodness my Momma made me get my lazy behind up and grocery shop on Sunday. I am definitely well fed, but clawing at the walls and ready to escape my apartment. 

Since it’s so cold outside, I thought I’d share a warm recipe that I made for friends and co-workers at my Christmas gathering (rave reviews people). So without further ado, I give you the most amazing White Bean Chicken Chili Recipe ever. Happy New Year and enjoy!

White Bean Chicken Chili 

Adapted from Soul Food and Southern Cooking

Makes 6 heaping bowls

Seasoning:

1 tsp ground pepper

1 tsp oregano 

1 tsp seasoning salt

1 tsp cayenne pepper

1 cube chicken bouillon, crushed

Chili:

1 onion, diced

2 cloves fresh garlic, minced

2 tsp olive oil

1 lb boneless chicken breasts

2 cans northern beans, rinsed and drained

14 oz chicken broth

4 oz can green chilies

8 oz sour cream

1/2 cup heavy whipping cream

Combine seasoning ingredients and set aside. Heat olive oil in large stock pot. Add onions, garlic and chicken, cook until no longer pink. Add beans, green chilies and chicken broth. Stir and simmer for 30 minutes. Add seasoning mixture and water if desired and simmer for 10 minutes. Remove stock pot from heat and immediately stir in sour cream and whipping cream.

Days 9, 10, 11, 12 & 13: Giving on a Prayer!

Day 9 - A little shopping for myself at H&M morphed into giving to UNICEF at the register. Money goes towards clean water, nutrition, vaccines and schools for children in developing countries (read more here). In return for my good deed I received 5 gift tags that mention said donation. 

Day 10 - Surfed the web and supported my cause by using GoodSearch.com. My charity of choice is March of Dimes…let’s save the babies! ”Give to charity just by searching the internet.” ABC News 

Day 11 - Sky’s the limit. On Saturday, I donated my frequent flyer miles to the American Red Cross via the ‘Miles of Hope’ program. My gift of miles will fly volunteers and staff to disaster areas for emergency relief efforts. Click here to spread your wings!

Day 12 - Snow day in ATL! Okay, it was only flurries here and there, but my niece caught a snowflake on her arm, so, it snowed. And, as I sat enjoying dinner in my warm and comfy apartment, I thought of all the homeless people on the streets of Atlanta. It was freeeeeeeezing. Sadness. So, I said a little prayer and donated to the Atlanta Mission. Heat up your holiday by giving a little something something. Donate here.
